Mexican Style 200g

Mediterranean Style 200g

A Bit About Me!

I set up Eggciting Foods Ltd in September 2016. As a passionate foodie, I have always wanted to have my own food business. I wanted a new way to eat eggs, which made me fuller for longer. So I created Just Add..., a flavoursome mix of sautéed fresh vegetables and herbs that when added to eggs ‘makes a meal of it’ in the form of a delicious omelette for breakfast, lunch or dinner. Just Add… is a versatile mix that also compliments pasta, meat and grains.
I was really encouraged by this experience, with repeat customers coming back week after week, opting for the healthy omelette over the bacon sandwich!

If you are a healthy person without much time to cook, Just Add... is perfect for you – a delicious, nutritious, healthy meal in minutes.

My Inspiration… I was inspired by my mum as she had her own food business, which meant that she had the flexibility to juggle her work schedule to be with her kids when needed. I wanted this working flexibility to be with my own three kids. I previously worked full time in Brtivic Marketing and Dunnhumby Ireland where I used my marketing experience in insights and brands to help me create the Just Add... brand. I grew up on nutritious home cooked food and wanted to provide a hearty food fast for busy people.

Recipes

Just Add… to eggs to make a healthy, delicious and nutritious omelette, frittata or scramble.

Omelette:


STEP 1: Break eggs into a bowl, whisk vigorously. Preheat a non-stick pan over a medium heat and add olive oil. Pour eggs into the hot pan. Allow to settle (1 min).

STEP 2: Add 2 tablespoons of Just Add… to one side of the eggs. When eggs have cooked through, lift the other side and fold over. Press down gently with a spatula to allow any liquid egg to flow out and cook through.

No hob – no panic – Just Add... can be made easily as a scramble in the microwave. Whisk 2 eggs in a microwaveable bowl. Add 2 tablespoons of Just Add… to the eggs. Cook on full power for 2 minutes, stirring after 1 minute.

Frittata:


STEP 1: Break eggs into a bowl, whisk vigorously. Preheat a non-stick pan over a medium heat and add olive oil. Add 2 tablespoons of Just Add… into the whisked eggs. Pour the mixture eggs onto the ovenproof hot pan. Allow to settle and cook around the edges.

STEP 2: Place in an oven at 200degrees Celsius for approximately 10 mins or until slightly golden brown on top.

Just Add… to cooked brown rice

Mix through to heat the Just Add mix. Place in the microwave or oven to heat through.

Just Add… to fresh pasta

This is especially nice with Just Add… Mediterranean Style mix.

Just Add… to a baked potato

Heat Just Add… in the microwave or oven on a baked potato for added flavour and texture. Sprinkle some salt and pepper on top to serve.

Just Add… to sliced cooked chicken

Just Add… is lovely as a dip

Add to hummus for added taste (Mexican and Mediterranean)

Use Mediterranean straight up as a dip with carrots or tortillas!

Just Add… to make a quiche

1 pot of Just Add… Leafy Greens

4-5 eggs

1/2 cup cream or milk

A sheet of shortcrust pastry for 9-inch tin.

Salt & pepper

Heat your oven to 180 degrees.

Set the pastry into the baking dish, so crust lies evenly and wraps around the edges of the dish. Trim away excess dough. Blind bake for 10 mins.

Add Just Add Leafy Greens and spread evenly throughout the dish.

Crack eggs and beat vigorously in a bowl, then add cream and mix thoroughly.

Add mixture to baking dish and gently mix the Just Add… into the eggs.

Place dish in oven and bake for 30 minutes, or until the quiche rises and turns a light golden brown colour. Let cool and serve!

Just Add… 2 avocados and 4 eggs (serves two)


4 eggs

1 Pot Just Add… Mediterranean

Salt, pepper

Heat your oven to 200 degrees.

Cut the avocados in half, remove the stone and about a tablespoon of avocado to let the egg fit in the centre.

Cook in the oven for about 15 minutes, until the egg white is fully cooked.
Sprinkle Just Add… Mediterranean on top and the remaining avocado, sprinkle salt and pepper and serve!
